Job Brief

As an experienced and qualified Head Chef your main responsibility will be to control, direct and organize the kitchen’s activities and food preperation process. You will be the first in command in the facilities and ensure high quality and contentment.

Responsibilities & Role Summary

  • Be responsible for all the food brands of the company
  • Developing unique and brand-appropriate menus
  • Collaborating with the Operations Manager to set item prices according to targets
  • Maintaining the kitchen and surrounding areas in conditions that meet the
    company standards and health code regulations
  • Monitoring inventory and purchasing supplies and food from approved vendors
  • Hiring, training and supervising kitchen staff
  • Assisting and directing kitchen staff in meal preparation, creation, plating and
    delivery
  • Identifying and introducing new culinary techniques
  • Preparing meals and completing prep support as needed

Job Skills and Competencies

  • Expert knowledge of the company’s different brands and cuisines
  • Advanced culinary skills including food preparation, flavour pairings and other cooking best practices
  • Ability to develop unique recipes
  • Current knowledge of trends in the food industry

SOUS CHEF

Job Brief

As an experienced and qualified Sous Chef your main responsibility will be to work alongside the Head Chef to manage daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, and monitoring ordering and stocking.

Responsibilities & Role Summary

  • Leads kitchen team in chef’s absence
  • Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
  • Oversees and organizes kitchen stock and ingredients
  • Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance
  • Keeps cooking stations stocked, especially before and during prime operation hours
  • Trains new kitchen employees to restaurant and kitchen standards
  • Manages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
  • Supervises all food preparation and presentation to ensure quality and restaurant standards
  • Works with head chef to maintain kitchen organization, staff ability, and training opportunities
  • Verifies that food storage units all meet standards and are consistently well-managed
  • Assists Head Chef with menu creation
